Pineapple Cucumber Salad - An easy refreshing salad or side made with juicy pineapples and crunchy cucumbers. Made with a simple home style dressing, this is an easy vegetarian salad recipe for spring, summer or barbecue potluck parties.
Ingredients:
- 1 cup Pineapple chopped into chunks
- 1 no Onion (Sliced) Red Onion used here
- 1 no English Cucumber or Hothouse Cucumber chopped into thick chunks
- 1 no Lime Juice to be extracted
- ¼ tsp Paprika
- ½ tsp Sugar
- Finely chopped Cilantro and Mint leaves as required
- Salt to taste
Instructions:
- In a bowl, add the chopped pineapple chunks, sliced red onion and diced cucumbers. Mix well.
- Add the dressing (check ingredients under salad dressing), toss well, refrigerate for a couple of hours and serve chilled as side or salad.
Notes:
- Use a Ripe pineapple for this recipe.
- You can skip the paprika if you are serving for kids or adjust the quantity. I would strongly recommend you to add some as the flavor is unbelievably good.
- Red onions are preferred over the white ones.
- You can substitute the sugar with honey.
- The recipe is Gluten Free and Vegan.
