
Welcome in the New Year with classic Japanese New Year dishes, or osechi ryori. Kuri kinton is a sweeter osechi ryori dish, made by combining mashed satsuma imo (Japanese sweet potatoes) with candied chestnuts. Once made, the dish has a distinct golden yellow colour, which symbolises wealth, prosperity, and good luck. This makes kuri kinton a particularly important New Year's dish, as well as a tasty one.
Ingredients:
- 200g sweet potato
- 100g candied chestnuts in syrup
- 1-2 tsp sugar, to taste
Instructions:
- Peel the sweet potato and cut into even-sized chunks. Boil until soft, about 10-15 mins. Test the softness with a fork. When soft, drain and mash with half of the chestnuts.
- Reserve one half of a single chestnut to top. Finely chop the remaining chestnuts and reserve the syrup.
- Add the chopped chestnuts and the reserved syrup to the mashed potato and chestnuts. Mix gently.
- Taste for sweetness, and add 1-2 tsp sugar if necessary.
- Serve topped with the reserved chestnut half with other osechi dishes for New Year’s.
